You don't even really need a servo motor for that. Just a motor that you can turn on and off really quickly. As far as I know, there are basically 2 ways of controlling the speed of a motor (besides of course, using gears): You can control the voltage, which is complicated and not recommended. Or, you can turn it on and off really quickly (like several times a second). You might think that this would give you jerky movement, but believe me, if you do it in small timeslices, it's as smooth as can be. But this isn't a system that you could easily implement if you don't have electronics experience, unless you buy the package. A servo does the same as above, but with its own control unit.
